Overnight breakfast casseroles are a life saver for holiday mornings or laid back weekends. The best part is that its made ahead of time and it’s super simple to throw together. Experiment with other flavors of pie filling. This would be delicious with so many fruits…peach, apple, cherry, or strawberry. I’m getting hungry!

This Overnight Blueberry French Toast Casserole is perfect for any holiday morning, brunch or a lazy weekend. Throw everything in to a casserole dish the night before and let all the yumminess soak in to the brioche bread before popping it into the oven for the easiest breakfast ever!
  • 1 loaf brioche bread– or any firm bread works, such as challah or sour dough. I actually got a loaf of vanilla brioche bread at Walmart for this recipe and it was divine!
  • Eggs
  • Milk– 2% or whole is best in this.
  • Maple syrup– for the casserole plus more for serving 
  • Cream cheese, room temperature 
  • Vanilla extract 
  • 1 can Lucky Leaf Blueberry Pie Filling
  • Dash of salt
  • Powdered sugar for dusting
This Overnight Blueberry French Toast Casserole is perfect for any holiday morning, brunch or a lazy weekend. Throw everything in to a casserole dish the night before and let all the yumminess soak in to the brioche bread before popping it into the oven for the easiest breakfast ever!

Make sure the cream cheese is soft and then beat with an electric mixer until creamy in a medium size bowl. I find whipping the cream cheese by itself first makes the custard creamier.

Add in the eggs, milk, maple syrup, vanilla, and salt. Mix with an electric mixer until well combined. Stir in the blueberry pie filling. Set aside.

Cut the brioche into cubes. Add to a greased 9×13 baking dish.

Pour over the blueberry mixture. Push the bread down into the liquid. Cover with foil and refrigerate at least 4 hours up to over night.

When ready to serve preheat the oven to 350°F.

Bake, covered, for 45 minutes. Uncover and bake 10 minutes. Top with powdered sugar and serve with maple syrup.

Add some bacon, sausage, a big fruit salad and you have yourself a stunning breakfast!

Refrigerate any leftovers in an airtight container up to 3 days.

Ingredients
  

  • 1 loaf brioche bread
  • 3 eggs
  • 1 cup milk
  • 1/4 cup maple syrup
  • 8 ounces cream cheese room temperature
  • 1 tsp vanilla extract
  • 1 can Lucky Leaf Blueberry Pie Filling
  • 1/8 tsp salt

Instructions
 

  • In a medium bowl beat the cream cheese with an electric mixer until creamy. Add in the eggs, milk, maple syrup, vanilla, and salt. Mix until well combined. Stir in the blueberry pie filling. Set aside.
  • Cut the brioche into cubes. Add to a greased 9×13 baking dish. Pour over the blueberry mixture. Cover with foil and refrigerate overnight.
  • When ready to serve preheat the oven to 350°F.
