What you’ll need

  • 9×13 baking dish
  • 2 pounds sirloin or strip steak, cut into cubes 
  • 2-3 large russet potatoes- or any potato works!
  • Yellow onion- optional
  • Mushrooms- also optional, but I love mushrooms and steak together
  • 1 pound fresh green beans or frozen works too
  • Seasonings- garlic, salt, pepper, onion powder, oregano, red pepper flakes (optional), dried basil
  • Olive oil or your favorite oil

How to make it

Preheat oven to 425°F.

The secret to the potatoes cooking at the same rate as the steak is to soften them in the microwave first. Clean the potatoes, poke holes all over potatoes with a fork and microwave for 4-6 minutes to soften.

While the potatoes are in the microwave, cut the steak into bite sized cubes, dice the onion, trim the green beans and cut the mushrooms into quarters. When the potatoes are finished, cut them into chunks as well.

Tip: Dice the potatoes smaller to ensure they cook at the same time as the steak.

Add everything to a large bowl- the steak, potatoes, veggies, olive oil and seasonings. Give it a good mix together and add to a 9×13 baking dish.

Cover with foil.

Bake 30-40 minutes until the steak is done to your liking and the potatoes are tender. I cook the dish for 30 minutes which yields a medium doneness on the steak . If you like your steak on rare side, reduce the cooking time.

Ingredients
  

  • 2 pounds sirloin or strip steak cut into cubes
  • 2-3 russet potatoes red or yellow work too
  • 1 yellow onion cubed
  • 8 ounces mushrooms quartered
  • 1 pound fresh green beans trimmed and cut
  • 2 tsp garlic cloves minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1/2 tsp red pepper flakes
  • 1 tsp basil
  • 1/4 cup olive oil more as needed

Instructions
 

  • Preheat oven to 425°F
  • Clean the potatoes, poke holes all over the potatoes with a fork and microwave for 4-6 minutes to soften. Cut potatoes into cubes.
  • Cut the steak into bite sized pieces, dice the onion, trim and cut the green beans and quarter the mushrooms.
  • In a large bowl combine the steak, potatoes, mushrooms, green beans, onions, spices and oil.
  • Add everything to a 9×13 casserole dish. Cover with foil.
  • Bake 30-40 minutes until the steak is done to your liking and the potatoes are tender. A 30 minute cook time will yield medium done steak bites. If you prefer your steak more rare, reduce the cooking time.
