These lemon flavored dessert bar, or Lemonies, are chewy and soft and the perfect dessert for lemon lovers.

If you are a lemon lover, this dessert bar is for you! It’s bursting with bright citrus flavor and so easy to make with less than 6 ingredients.

This bar is dense, moist, and chewy- just like a brownie.

What you’ll need

  • An 8×8 baking dish
  • Electric mixer
  • Nonstick spray or extra butter for the pan
  • 1 box lemon cake mix
  • 1/2 cup unsalted butter
  • 2 eggs
  • 1/4 cup lemon juice or 2 tsp lemon extract- divided plus zest
  • 1 cup powdered sugar, sifted- for the glaze
  • 1-2 tbsp milk, as needed to thin the glaze if necessary

How to make it

Preheat oven to 350°F

To a mixing bowl add the lemon cake mix, melted butter, eggs and 2 tablespoons lemon juice or 1 teaspoon lemon extract. Mix with an electric mixer, the batter will be thick.

Spray a 9×9 baking dish with nonstick spray. Pour the batter into the baking dish and press it evenly. 

Bake 20-25 minutes until a toothpick inserted into the center comes out clean.

Prepare the glaze

In a mixing bowl whisk together the powdered sugar, lemon zest and 2 tablespoons lemon juice or 1 teaspoon lemon extract.

Find the glaze is too thick? Add 1-2 tablespoons of milk, a little at a time, to thin it. If you are using lemon extract, you’ll probably need milk to thin the glaze. If you are using fresh lemon juice, you probably will not need to thin it.

Let the bars cool and pour the glaze evenly over top. Let the glaze set 20 minutes and cut into 9 squares.
