Hasselback Chicken with Gouda and Apples

Hasselback chicken is so easy to make, but it looks so fancy! It’s chicken breast cut hasselback style, then stuffed with the perfect pairing of gouda cheese and sliced gala apples. But it doesn’t stop there! The chicken is topped with a panko breadcrumb mixture and when baked gives the chicken a nice crunch in every bite.
You’ll love this way to prepare chicken! Think of all the stuffing possibilities! Cheddar and bacon, ricotta and spinach, ham and cheese, so many options.
What is hasselback style?
Hasselback refers to a method of preparing food, usually potatoes, in which slices are cut into the food, but not all the way through. This method gives you pockets to stuff with anything you like. Typically hasselback potatoes are stuffed and slathered with butter, cheese and herbs, and they are divine!
It was first served at the Hasselbacken in Stockholm, Sweden in the 1940’s. Neat, huh!
What you’ll need
- A sheet pan or baking dish
- 2-4 chicken breasts- this is easy to customize for your family’s serving size
- Gouda cheese, sliced
- 1 large apple or 2 small, such as gala, red delicious or pink lady
- For the topping-Panko breadcrumbs, salt, pepper, sage, garlic powder and butter
- Honey mustard- to brush over the chicken before the topping- give it great flavor
How to make it
Preheat oven to 400°F
Add the chicken to a sheet pan. Cut slits into each of the chicken breasts, about an inch apart, about 3/4 of the way through. Do not cut all the way through.
Spread 1/2 tbsp mustard on each breast. Season with salt and pepper to taste.
Place an apple slice and cheese slice in each pocket using it evenly between all the chicken.
In a bowl mix together the breadcrumbs, salt, pepper, garlic powder, and sage.
To a small pan add the butter over medium heat and when it’s melted add the breadcrumbs mixture.
Toast 30 seconds to 1 minute until golden brown. Sprinkle the breadcrumb mixture evenly over the chicken, between the apples and cheese.
Bake until the chicken is cooked through to 165 degrees, 20 to 30 minutes.
Other stuffing suggestions
Try these flavor combos in place of the gouda and apple. Keep the panko topping or omit it.
- Caprese- tomatoes, mozzarella, and basil. Drizzle with balsamic glaze when the chicken comes out of the oven.
- Chicken Cordon Bleu- stuff with Swiss cheese and ham
- Spinach, ricotta cheese, and sun dried tomatoes
- Bacon and cheddar cheese
- Spinach and Boursin cheese
- Broccoli and cheddar cheese

I’m a little confused on toasting the breadcrumbs in the bowl. Do we put it in an oven safe bowl and broil? Looks delicious and I just want to do this correctly. Thanks
Hi Patty, I think you might have missed steps 6 and 7. You’ll want to mix the breadcrumbs together with the seasonings in a small bowl and then add toa small pan on the stove with melted butter. Cook in the pan until the breadcrumbs are toasted and golden brown. Remove from the pan and press the breadcrumbs into the chicken before placing the chicken in the oven. Hope this helps!
