My favorite thing about this easy casserole is being able to customize it with your favorite taco toppings like sour cream, salsa, or guacamole. A comfort food classic with a twist! Easy to prepare and loaded with all the goodness of a taco in a shareable form, this dish is sure to become a go-to favorite!

  • 9×13 Baking Dish
  • 1 pound lean ground beef– this could also be ground turkey or chicken
  • 1/2 onion, diced- you can also grate the onion if your kids won’t eat anything they find an onion sliver in. (IYKYK) Red onion, yellow , or white onions all work.
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (1.25 ounces)- or make your own seasoning; recipe at the bottom of this post.
  • 10 ounces can Rotel
  • 3 cups cheddar or Mexican blend cheese, shredded
  • 1 cup sour cream– or substitute plain Greek yogurt. This makes the mixture creamy and gives a little tang, so either Greek yogurt or sour cream will work.
  • 9.75 ounce bag Nacho Cheese Doritos, gently crushed, or 5 mini bags
  • Garnish: The fun part! Ideas include shredded lettuce, sliced olives, taco sauce, hot sauce, diced tomatoes, avocado, green onions, extra sour cream 

How to make it

This casserole is so easy to throw together!

Preheat the Oven:

  • Preheat your oven to 350°F.

Cook the Ground Beef Mixture:

  • In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is no longer pink. Drain any excess grease if needed.
  • Stir in the taco seasoning and Rotel, mixing until well combined.
  • Add the sour cream and mix thoroughly.

Assemble the Casserole:

  • Transfer the beef mixture to a 9×13-inch baking dish.
  • Add half of the crushed Doritos and 2 cups of shredded cheese to the dish. Mix everything together, spreading the mixture evenly.
  • Sprinkle the remaining cheese and crushed Doritos evenly over the top.

Bake:

  • Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.

Homemade Taco Seasoning

If you prefer to make your own Taco Seasoning, it’s easy! This makes a batch; use 3 tablespoons of mix to replace one packet of seasoning.

  • 1/4 cup chili powder
  • 2 tbsp cumin
  • 4 tsp paprika
  • 2 tsp onion powder
  • 2 tsp oregano
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tsp cornstarch
  • Optional: pinch of red pepper flakes to make it spicy

Mix all ingredients together and store in an airtight container.
