  • Sheet pan– I like to line it with parchment paper
  • Lean ground beef – or use ground lamb, chicken or turkey
  • Eggs– to hold it all together
  • Seasonings– fresh or dried parsley, fresh mint, fresh or dried oregano, salt, black pepper, garlic cloves
  • Red onion-grated or diced very small
  • Breadcrumbs – I’m just using regular ole breadcrumbs, but panko are great, too
  • Fresh lemon juice
  • Optional for serving-pita or naan bread, diced tomatoes, cucumbers, sliced red onion, tzatziki sauce 

How to make it

Preheat oven to 375° F.

In a large bowl combine the ground beef, eggs, breadcrumbs, seasonings, and the juice of half of a lemon. Mix everything together.

Line 1-2 sheet pans with parchment paper.

Using a 1 tablespoon scooper, make meatballs with the mixture and place on the sheet pan.

Homemade Tzatziki sauce

Ingredients:

  • 1 cup plain Greek yogurt (full-fat or low-fat)
  • 1 cucumber, grated and squeezed to remove excess water
  • 2 garlic cloves, minced
  • 1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon salt (adjust to taste)
  • A pinch of black pepper

Instructions:

  1. Prepare the Cucumber: Peel and grate the cucumber using a box grater. Place the grated cucumber in a clean kitchen towel and squeeze out as much liquid as possible to avoid a watery sauce.
  2. Combine Ingredients: In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, olive oil, lemon juice, salt, and pepper.
  3. Mix: Stir the ingredients until well combined. Taste and adjust seasoning if needed. Cover and refrigerate for at least 30 minutes to allow the flavors to meld together.

Ideas for serving

  • Stuff the meatballs into warm pita bread or naan with lettuce, tomatoes, red onion, and tzatziki for a gyro-inspired meal.
  • Over a big Greek salad made with tomatoes, cucumbers, Kalamata olives, red onion, and feta cheese.
  • Over a bed of rice, couscous, quinoa or potatoes
  • In a bowl: Arrange the meatballs in a bowl with hummus, tabbouleh, roasted vegetables, and pita chips for a vibrant meal.
  • Serve the meatballs over orzo pasta tossed in olive oil and lemon juice or over zucchini noodles for a low-carb option.

Ingredients
  

  • 2 pounds lean ground beef
  • 2 eggs
  • 1 tablespoon fresh parsley chopped, or 1 tsp dried
  • 1 tablespoon fresh mint chopped
  • 1 tablespoon dried oregano or 1 tablespoon fresh
  • 1 tsp salt
  • 1/2 tsp black pepper
