- Crock Pot– 6 quart or larger
- Kielbasa, sliced into coins- I prefer the skinless variety, but use what you like
- Cream of chicken soup – you can sub this with cream of celery
- Worcestershire sauce – just a dash for tang
- Dijon mustard
- Cheddar cheese
- Chicken broth– or use vegetable broth
- Frozen Potatoes O’Brien with onions and peppers
- Sour cream – extra creaminess
- Seasonings– black pepper, garlic powder, onion powder, mustard powder, oregano
How to make it
Spray the crock pot with nonstick cooking spray or use a crock pot liner.
Add in the frozen potatoes and the sliced kielbasa to the crock pot.
In a mixing bowl add the chicken broth, sour cream, seasonings and cream of chicken soup.
Whisk together and pour into the crock pot.
Add in 1 cup of shredded cheddar and mix together.
Cook on low for 3 hours. Add in the remaining cheddar cheese and stir.
Spoon into bowls. Garnish with sliced green onion and extra cheese and enjoy!
Tip
This soup is thick, it’s meant to be on the thicker side like a creamy potato soup. If it’s too thick for your liking, you can add more chicken broth.

Hi…this sounds delicious but I am allergic to peppers…and other type of frozen potatoes that I can use?…thank you
Yes, absolutely, they make plain frozen hashbrown potatoes you can use. You could add a diced onion, if you wanted.
Is the amount of chicken broth incorrect? I made it as directed but it wasn’t like soup…more like a potato casserole. I added 2 more cups of chicken broth to make it more “soup” like and it’s still pretty thick. Perhaps it was suppose to be 1 quart of broth? Thanks! Flavor is delicious!
Hi, the measurements are correct, it’s supposed to be thick like a potato soup. Did you use frozen hashbrowns? the water from the potatoes adds to the liquid. You can definitely add more broth though if it’s too thick for your liking.
