This creamy pasta salad is the perfect accompaniment to Crockpot BBQ Chicken, Slow Cooker Italian Beef Sandwiches, Sloppy Joes, or your favorite summer mains.

It’s great for a party or potluck!

Add cooked cubed chicken for a heartier salad.

Creamy Bacon Ranch Pasta Salad combines crisp bacon, cheddar cheese, tender pasta with peas for a juicy bite with a creamy ranch dressing. A great summer pasta salad for any occasion.

What you’ll need

  • Short cut pasta- such as rotini, macaroni, shells, or bowties
  • Bacon- cooked and chopped
  • Frozen peas, thawed- or fresh peas. Avoid canned because they will be too mushy in the salad
  • Cheddar cheese, cut into small cubes- or your favorite cheese. Pepper Jack would be great!
  • Seasonings- 1 packet of ranch seasoning mix, onion powder, garlic powder, dried dill (or fresh dill, if you have it), parsley flakes
  • Green onions, sliced (scallions)- Chives work, too
  • Plain Greek yogurt and mayonnaise for the dressing

How to make it

Make the pasta: Bring a large pot of water to a boil and cook the pasta according to the package directions. Drain the pasta, rinse it in cold water and add to a large mixing bowl.

Next, slice the cooked bacon into pieces. Add the bacon to the bowl with the pasta.

Combine remaining ingredients: To the same mixing bowl add the thawed peas, cheddar cheese, all the seasonings and green onions. Spoon in the Greek yogurt and mayonnaise and mix everything together until well coated.

Tip: If the pasta seems dry, add more yogurt or mayonnaise to your preference.

Refrigerate leftovers up to 4 days. 

This makes about 6 servings; double or triple the recipe for a large crowd.

I love how the peas pop in your mouth along with the creamy cheddar cheese and the crispiness of the bacon. Everything goes so well together!

Ingredients
  

  • 8 ounces short cut pasta such as rotini
  • 1/2 pound bacon cooked
  • 1 cup frozen peas thawed
  • 1 cup cheddar cheese cut into small cubes
  • 1/2 tsp parsley flakes
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp dried dill
  • 1 ounce packet dry ranch seasoning mix
  • 1/3 cup green onions sliced
  • 1/2 cup plain Greek yogurt
  • 1 cup mayonnaise

Instructions
