Our family LOVES roasted potatoes. When they are so easy to prepare, I make them all the time.

Roasted potatoes go so well with practically any dish. Other than washing the potatoes and cutting them, this recipe is hands off. Just toss red potatoes on a sheet pan with melted butter, olive oil and seasonings.

If you don’t feel like chopping potatoes, you can use those little baby potatoes and make this dish even easier! Change up the seasonings to what you have on hand or to your family’s taste.

What you’ll need

  • Sheet pan- these are the ones I’m using
  • 2 pounds red potatoes- sub yellow potatoes or the baby potatoes
  • 2 tbsp butter
  • 2 tbsp olive oil 
  • Seasonings- onion powder, garlic, paprika, salt, and pepper 
  • Fresh parsley, minced, for serving (optional)

How to make it

Preheat oven to 400°F

Clean and cut the red potatoes into quarters. Place potatoes on a sheet pan.

Add the the butter to a small bowl and melt in the microwave. To the bowl add in the olive oil and seasonings. 

Pour over the potatoes and mix together until potatoes are well coated.

Bake 40 minutes, flipping potatoes halfway through cooking.
