If you are looking for healthy recipes that actually taste good and can be made quickly, this recipe is for you! It’s chicken breast (or sub thighs) mixed with an assortment of vegetables tossed in olive oil and seasonings. It’s minimal effort with maximum flavor!
I love using my air fryer for healthy, all-in-one dinners, so I make this a lot. The veggies can be customized to whatever you happen to have in your fridge. You can use any combination you like! It’s a perfect veggie drawer clearing meal.
What you’ll need
- Air Fryer– I LOVE my Cosori Turbo Deluxe air fryer. It’s so user friendly and the basket is dishwasher safe. Win!
- 2 chicken breast, cut into pieces- or use chicken thighs or tenderloins
- Veggies– use anything you have on hand or to your preference. This is easy to change up! This recipe uses zucchini, bell peppers, and broccoli
- Olive oil or avocado oil
- Seasonings– salt, pepper, Italian seasoning, garlic and paprika
How to make it
Cut all of your chicken and vegetable in the same size pieces so they cook at the same rate.
Mix the chicken and vegetables together with the olive oil and seasonings until well coated.
Add everything to the air fryer basket and cook at 400 degrees for 15-20 minutes until the chicken is cooked through.
With the Cosori Turbo Deluxe air fryer there’s no need to shake the food halfway though, but you may need to do that.
How easy was that!?
I like to enjoy this over rice, but you could omit the rice for a low carb dinner.

Ingredients
- 2 chicken breast cut into pieces
- 1 zucchini diced
- 1-2 bell peppers diced
- 1 cup broccoli florets
- 3 tbsp Olive oil
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 2 cloves Garlic minced
- 1 tsp Paprika
- 1 tsp Italian Seasoning
Instructions
- Cut the chicken and veggies about the same size so they cook at the same rate. Add the chicken and vegetables to a mixing bowl.
- In a small bowl, whisk together the olive oil and seasonings. Pour over the chicken and vegetables and toss well to coat.
- Pour everything into the air fryer basket.
- Air fry at 400° for 15-20 minutes until the chicken is cooked through.
- Serve alone or over rice.
