We recently made a little family trip to Atlanta, Georgia. We stopped in to an Irish pub and ordered fried Rueben egg rolls and they were amazing! Just like a traditional Rueben sandwich, but crispy and delicious, dipped in that signature thousand island dressing.

As soon as we got back I wanted to make them again. I don’t particularly like frying, so we tried these in the air fryer. And they were a hit! They don’t taste the same as a deep fried egg roll, but these are quick and easy with no fry oil hassle.

  • An air fryer– if you don’t have an air fryer or are in the market for a new one, might I suggest the Cosori Brand Turbo Deluxe Air Fryer. I absolutely love it! And it’s small enough to live on your counter full time.
  • Sliced deli style corned beef 
  • Sliced Swiss cheese 
  • Sauerkraut, drained- I just used a can of sauerkraut. You won’t need the whole can. We love the leftover sauerkraut on hot dogs, pork, or kielbasa.
  • Thousand island dressing– bottled or homemade
  • 8 eggroll wrappers– find these in the refrigerated produce section of the grocery store near the tofu and plant based items.
  • Nonstick spray or oil

Slice the corned beef and Swiss cheese into thin strips. Make sure to drain the sauerkraut from any liquid. This makes 8 egg rolls. You’ll want to divide the corned beef, Swiss cheese, and sauerkraut evenly for 8 egg rolls.

Place an egg roll wrapper on your work surface with the point facing towards you. Add corned beef first, topped with the Swiss cheese, sauerkraut and about 1 teaspoon of dressing to the middle of the egg roll.

Fold in both sides first, then fold up the bottom.

Dip your finger in water and run it along the top edges of the egg roll wrapper. Continue rolling and seal the edges.

Place the egg rolls in the air fryer and spray on both sides with nonstick spray or oil. Don’t crowd the basket; make these in two batches if they won’t all fit.

Air fry at 380 degrees for 8 minutes, flipping half way. Let cool a couple of minutes before digging in.

Dip in the remaining dressing. Enjoy!

If you don’t have 1000 Island dressing on hand, it’s super easy to make it yourself!

Here’s how:

In a bowl mix together 1 cup of mayonnaise, 1/4 cup ketchup, 1/4 cup dill pickle relish, a dash of salt, pepper, and garlic powder, and 1 tablespoon granulated sugar. Refrigerate 30 minutes to let everything meld together.

Ingredients
  

  • 1 pound sliced deli style corned beef
  • 6 slices Swiss cheese
  • 1/2 cup sauerkraut drained
  • Thousand island dressing
  • 8 eggroll wrappers
  • Nonstick spray or oil

Instructions
 

  • Thinly slice the corned beef and Swiss cheese.
  • Lay the eggroll wrappers out on a diagonal with a point towards you.
  • Evenly divide the corned beef, cheese and sauerkraut among 8 eggrolls.
  • Lay the corned beef in the middle of the eggroll wrapper, topped with cheese and sauerkraut.
  • Add 1 teaspoon of thousand island dressing over the sauerkraut.
  • Roll up the eggroll- fold in both sides, then fold up the bottom. Dip your finger in water and run it along the edges of the top corner to seal the eggroll. Continue rolling.
  • Spray the egg rolls with oil or nonstick spray.
  • Add to the air fryer, cook at 380° for 8 minutes, flipping halfway through.
  • Dip into remaining thousand island dressing.
