If you are a banana bread purist, this recipe is not for you. 😉 My kids LOVE banana bread, I mean they can’t get enough. I’m convinced that they request bananas and let them get mushy on purpose so I’ll make banana bread. A loaf never lasts a day in our house.

Because I make it so often I like to change it up and try different ways to make it and use different mix-ins. I’ve used a cinnamon swirl, walnuts, Nutella swirls, but our favorite is chocolate chips-by far.

What you’ll need

  • 9×6 or similar size bread loaf pan
  • nonstick spray, butter, or oil to grease the pan
  • 3-4 overripe bananas 
  • 1 box yellow cake mix 
  • Unsalted butter- melted
  • Eggs
  • Vanilla extract
  • Cinnamon
  • A dash of salt
  • 1 cup chocolate chips (optional) you can also add in chopped nuts, if you prefer

How to make

First: Preheat your oven and mash your bananas in a large mixing bowl.

Next: Add the yellow cake mix, the melted butter, eggs, vanilla, salt, and cinnamon to the mixing bowl with the bananas. Using an electric hand mixer or stand mixer beat until mixed together.

Then: Fold in the chocolate chips, if using, and pour the batter into the greased pan.

Bake: for 45-55 minutes. Mine usually takes 50 minutes. It’s done when a toothpick inserted into the center comes out clean.

Tip: Check the bread at 30 minutes, if it’s browning too quickly on top loosely place a piece of foil over top.

Cool: Let the bread cool in the pan 20-30 minutes before slicing.

Ingredients
  

  • 3-4 overripe bananas
  • 1 box yellow cake mix
  • 1/2 cup unsalted butter melted (one stick)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup chocolate chips optional

Instructions
 

  • Preheat oven to 350°F
  • Using nonstick spray, oil, or butter, grease a 9×6 loaf pan.
  • Mash 3-4 very ripe bananas in a large mixing bowl
  • To the banana bowl add the cake mix, the melted butter, eggs, vanilla, salt and cinnamon. Using an electric mixer, whisk together until well combined.
  • Fold in chocolate chips (if using)
  • Pour into the greased loaf pan and bake for 40-50 minutes. (Ours took 50 minutes). If it starts browning too fast on top after 30 minutes of cooking, loosely cover it with foil for the rest of the baking time
  • Let cool in the pan for 20 minutes before slicing and enjoying.
