Crock Pot Buttery Beef and Potatoes

Crock Pot Buttery Beef and Potatoes is an easy and super delicious five ingredient dump-and-go dinner with fall apart beef and tender potatoes, which is sure to get on the weekly dinner rotation.

It’s a true dump-and-go recipe, adding all of the ingredients to your slow cooker at once and turning it on. So simple!

What you’ll need

  • A crock pot– 6 to 8 quart size
  • Stew meat, cut into pieces. I like to buy it pre-cut, but a roast works too! Just cut it into 1-2″ inch cubes. The beef is fall apart tender at the end.
  • Onion soup mix packet– the dry mix, such as Lipton Onion Soup Mix
  • Butter– for richness! This helps to make the sauce.
  • Seasonings– grated garlic and pepper. I don’t use additional salt in this because the onion soup mix contains sodium already. Feel free to add any other seasonings you like.
  • Potatoes– cut into chunks. Any potato works! Skin on or off, totally up to you.

How to make it

Just dump everything in and go!

First, spray your slow cooker with nonstick spray or use a crock pot liner. Add in the beef, potatoes, garlic, pepper, and onion soup mix. Give it a good stir.

Place the sliced butter on top. Cover and Cook low and slow- about 6 to 7 hours is perfect.

  1. Add a diced onion for a more onion-y flavor. Add fresh mushrooms.
  2. If you’d like to add a vegetable, pour in a bag or two of frozen or fresh broccoli, frozen or fresh green beans, or asparagus in the crock pot the last 1-2 hours of cooking. Or serve a veggie or salad on the side.
  3. Add in carrots at the beginning of the cooking process, if you love carrots. Carrots take longer to cook than most other vegetables, so it’s best to add early in the cooking process to ensure they are soft.
  4. You can substitute a roast, cut in to 1-2″ chunks, or steak tips for this recipe.

DIY Onion Soup Mix

How to make your own onion soup packet. Mix together:

  • 1/4 cup dried minced onions
  • 2 teaspoons low sodium beef bullion powder or granules
  • 1 1/2 teaspoons onion powder
  • 1/4 teaspoon celery seeds
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika

When you make it yourself you can adjust the seasoning measurements to fir your taste, or leave out the onions if you don’t want them.

No need to sear the meat! Cooking the beef low and slow makes it fall apart tender and juicy.

No need to add any liquid! The butter along with the cooking juices is enough.

More FAQ’s

  • You do not need to add any liquid, the butter is enough.
  • You can add carrots, broccoli or green beans (either fresh or frozen) in the last 1-2 hours of cooking time.
  • All crock pots are different, and some run hotter than others. Check your beef at 6 hours and if it’s tender and the potatoes are cooked, it’s done. Some crock pots might run too hot to cook for a full 8 hours, you know your crock pot best.
  • If your meat is cut smaller, cook for less time- 6 hours- or the beef will burn.
  • If you don’t want to use pre-cut stew meat, get a chuck roast and cube it yourself in 1-2″ cubes.

  1. I’m cooking this recipe now. I doubled the recipe and there’s no moisture in the crock. Idk what to do except put water or beef broth into it, now. It’s not through cooking either. The potatoes are still firm.

    1. Hi Wendy, this recipe doesn’t require any liquid. There’s a lot of factors that would lead to the potatoes not being cooked through though, happy to help you troubleshoot! The potatoes should be diced to bite size to ensure they cook through. The total cook time is 7 hours on low, which should be plenty of time to cook potatoes. Make sure you don’t lift the lid during cooking, every time you lift the crock pot lid you lose cooking time. Hope that helps!

    1. I’ve never made it in an instant pot. If you do you’ll want to add liquid- 2-4 cups of beef broth before cooking. If you try let me know!

    1. Yes, but I’ve never tested it. You’d probably want to add 2-4 cups of beef broth and simmer on the stove for 2 hours or so until the meat is tender and cooked through. Let me know if you try and how it turns out!

  8. I made this last night, per your suggestions I added both an onion and baby carrots. I did increase the butter by 3 tablespoons to account for the additional veggies and it was out of this world. My husband and son loved it. There are just enough leftovers for another meal which is perfect since my husband is recovering from surgery and I don’t have a lot of time to be in the kitchen. Thank you so much for the recipe!
