If you are looking for an easy, last minute dessert recipe for a party or holiday (Valentine’s Day, maybe?) look no further than these super yummy Strawberry Brownies!

Although, they aren’t really brownies because they are made with strawberry cake mix, they have the chewy, moist texture you love in a brownie.

Five ingredients and 20 minutes. Let make them!

What you’ll need

  • 1 box strawberry cake mix
  • Eggs
  • Vegetable oil– or canola, a neutral oil
  • Powdered sugar– for the glaze
  • Milk or water– also for the glaze
  • Optional– add 1/2 teaspoon strawberry extract to the glaze for more strawberry flavor.

How to make Strawberry Brownies

Mix together the cake mix, eggs, and oil. The mixture will be thick. Pour it in to an 8×8 greased baking dish.

Bake it. Bake the brownies for 20 minutes, until they are a light brown on top.

Prepare the glaze. Mix together the powdered sugar and milk to make the glaze while the brownies are baking because you will pour it over the brownies while they are still warm.

Pour the glaze over the warm brownies and spread it evenly. Let the glaze set before cutting into squares.

Tips and Suggestions

  • Add 1/2 teaspoon of strawberry extract to the glaze for a more intense strawberry flavor.
  • Try adding 1/2 cup of white chocolate chips to the batter.
  • Double this recipe for a 9×13 baking dish.
  • Bake times may vary depending on your oven and if you use a metal or ceramic or glass baking dish. I used ceramic for this recipe and 20 minutes as a perfect cook time for me. Check the brownies at 18 minutes and use your judgement of your oven to know if they are baked or need more time. The top should be light brown in color.
  • Tip! Use a plastic knife for a clean cut on brownies.
  • Store in an airtight container up to 3 days.

Ingredients
  

For the brownies:

  • 15.25 ounce box of strawberry cake mix
  • 2 eggs
  • 1/2 cup vegetable oil

For the glaze:

  • 1 cup powdered sugar
  • 2 tbsp milk or water + more if needed

Instructions
 

  • Preheat oven to 350°F
  • Lightly grease an 8×8 baking dish
  • In a bowl, combine the cake mix, eggs and oil and mix well with a hand mixer or stand mixer. The mixture will be thick! Pour batter in a 8×8 dish and pat down so it fits in the dish.
  • Bake for 18-20 minutes, until the top starts to turn a light brown. Be careful not over bake.
  • While the brownies are baking, prepare the glaze. In a bowl whisk together the powdered sugar and milk until its a glaze like consistency and pourable. You may need to add a splash more milk or water to thin it to the right consistency. You want it thick but pourable, not too thin.
  • When the brownies come out of the oven, pour the glaze over the warm brownies.
  • Allow the glazed to set before cutting into squares.
