Ok, but let’s talk about the chicken. Because it’s incredible!
To make the chicken
You will love this chicken! This recipe makes way more chicken than you’ll need for one quesadilla, so it’s perfect for meal prepping your lunches all week. The chicken is delicious on it’s own with a side of veggies for a full meal, or to top a salad, to add to a sandwich, or in a wrap.
The full recipe is at the bottom of this post, but here’s hot to make the chicken:
- Toss 2 lbs of chicken breast with olive oil, paprika, black pepper, salt, paprika, cumin, garlic powder, and onion powder.
- Air fry at 360 degrees for 17 minutes, flipping once.
- Let the chicken rest for 5 minutes before shredding or slicing. Perfection!
Avocado Crema
While the chicken is cooking, prepare the avocado crema. This easy dipping sauce makes a lot and will keep in the fridge up to 5 days.
To a blender or food processor add a ripe avocado, Greek yogurt, lime juice, cilantro, garlic, salt, pepper, and a little olive oil or water and blend until smooth and creamy.
Put it all together
After the chicken rests and is shredded, let’s put the quesadilla together.
In to the air fryer basket add a low carb tortilla, the shredded chicken, shredded cheddar (or your favorite) cheese, cilantro, a squeeze of lime juice, and black beans. Pop it back into the air fryer at 375 degrees for 3 minutes. I love that with this air fryer you don’t need any additional oil for the quesadilla to be crispy!
Top with the avocado crema, more cilantro leaves, diced tomatoes, a squeeze of lime, or your favorite toppings, and enjoy!

High Protein Quintessential Quesadilla
Equipment
Ingredients
For the chicken:
- 2 lbs boneless skinless chicken breast (2-4 chicken breasts)
- 3 tbsp olive oil
- 1/2 tsp black pepper
- 1/4 tsp salt
- 2 tsp paprika
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
For the Avocado Crema:
- 1 ripe avocado
- 1/2 c plain Greek yogurt
- 1 tbsp cilantro
- 1 clove garlic minced
- 1 tsp salt
- 1 tsp cracked black pepper
- Juice of 1/2 lime
- 1-2 tbsp olive oil or water
For the quesadilla:
- 1 low carb tortilla
- 2 tbsp shredded cheddar cheese
- 2 tbsp canned black beans drained and rinsed
Instructions
- Prepare the chicken: toss the chicken breasts in the oil and seasonings. Air fry at 360° for 10 minutes, flip and cook another 7 minutes. Let rest 5 minutes and shred the chicken.
- Prepare the avocado crema: while the chicken is cooking prepare the crema. To a blender add the avocado, Greek yogurt, salt and pepper, cilantro, garlic, lime and oil or water. Blend until smooth. Add more salt and pepper to taste.
- Assemble the quesadilla. Add 1 tortilla to the air fryer basket. On half of tortilla Top with about 1/4 cup of shredded chicken, cheese, black beans, cilantro and a squeeze of lime juice. (Optional, spray tortilla with nonstick spray) Air fry at 375° for 3 minutes. Top quesadilla with the avocado creams, extra cilantro, diced tomatoes and enjoy immediately.
