Easy Berry Angel Food Cake

Why I love this Easy Berry Angel Food Cake recipe

What you’ll need

  1. Store bought angel food cake, or if you have more time you can bake your own! It’s just so easy to head to the grocery store bakery and pick up a fresh angel food cake.
  2. Cool whip– I used 2 of the 8 ounce containers. You can definitely use less if you like more of the cake to shine through. If you aren’t a fan of cool whip you can definitely make your own whipped cream. (see instructions below)
  3. Fresh berries– Any berries work! I’m using an assortment of strawberries, blackberries, blueberries, and raspberries. You could do all strawberries for an easy strawberry shortcake or a mix of just 2 berries; it’s totally up to you!
  4. Lemon– the juice and zest of 1 lemon, it really brightens up the flavors
  5. Cake Stand or serving dish
  6. Serrated Knife– a must to easily cut the angel food cake into layers

How to clean your berries

Here’s how I easily and thoroughly clean my berries:

  • Fill a sink or large bowl with cool water.
  • Add 1 tsp of baking soda and 2 tablespoons white vinegar.
  • Add the berries and let them soak for 5 minutes.
  • Rinse the berries in cool water and lay them to dry on a towel
  • When the berries are completely dry, store in an air tight container.

How to make homemade whipped cream

If you have some extra time, whip up a batch of homemade whipped cream.

You’ll need:

  • 2 cups cold heavy whipping cream
  • 1 1/2 cups sifted powdered sugar
  • 1 lemon- zest and juice (just for this particular dessert) Normally you’d add vanilla extract instead.

In a large bowl with a hand mixer or stand mixer, beat the heavy whipping cream on low, gradually increasing the speed until you have stiff peaks. Zest the lemon (just the yellow part, don’t zest into the with pith). Squeeze in the lemon juice and add zest and mix. Slowly add in the powdered sugar while mixing until fully incorporated.

How to make Berry Angel Food Cake

It’s really more about assembly, because that’s how easy this recipe is!

Cut the angel food cake into 3 layers horizontally (or cut 2 layers). Set 2 layers aside and put the bottom on a cake stand. Mix the lemon juice and zest (reserving some zest for garnish) to the cool whip and mix it together. Add cool whip to the bottom angel food cake layer and top with berries.

Repeat with the other 2 layers of angel food cake, cool whip, and berries. Garnish with the reserved lemon zest and dust with powdered sugar. Slice and serve immediately. So easy!

Serving Options

Try these other super easy serving options:

  • Cut the angel food cake into cubes instead of into layers and add to a trifle bowl, still layering like usual, but more travel friendly!
  • Make this in individual servings in small mason jars. Cube the angel food cake and add in layers with the cool whip and berries into the mason jars. Put the lids on and these are also travel friendly.
  • Make it into an ice cream cake! Instead of angel food cake, get a pound cake. Cut the pound cake into 3 layers. Put the bottom layer in a bread pan, next layer on the cool whip or use vanilla ice cream, then use fresh berries, or try a layer of berry jam, pie filling, or fruit ice cream topping (like strawberry) Repeat the layers, freeze for 1 hour, cut and serve.

Ingredients
  

  • 1 Round Angel Food Cake store bought or homemade
  • 16 ounces Cool Whip or Redi-Whip or homemade whipped cream
  • 1 lemon juice and zest
  • 3 cups assorted berries, such as blueberries, blackberries, strawberries and raspberries

Instructions
 

  • With a serrated knife cut the angel food cake into 2 or 3 layers
  • Mix the juice and zest of 1 lemon in with the cool whip until well combined
  • Add the bottom cake layer to a cake stand. Spread 1/3 of the cool whip over the cake and top with 1 cup of the assorted berries. Add the middle cake layer and repeat the steps; spreading another 1/3 of the cool whip and 1 cup of berries. Add the top layer and spread the remaining cool whip and remaining berries over the cool whip.
  • Garnish with additional lemon zest and dust with powdered sugar, if desired.
  • Cut into slices and serve immediately.
