The Best Watermelon Salsa
Salsa is already amazing, but add in some fresh, ripe, juicy watermelon and now it’s a party! The Best Watermelon Salsa starts with sweet watermelon, spicy poblano peppers, and tart red onion, this is the best combination! We make it every time we get a watermelon because it’s so easy and quick and the best summer snack!
I started experimenting with fruit salsas and I might be hooked! There are so many options and flavor combinations. Juicy watermelon might just be the most refreshing snack when the heat index is over 100 degrees! It’s opened up my salsa world! Have you tried my Peach Salsa? Amazing!
What you’ll need
- Seedless watermelon-I get a lot of comments about the seeds being visible in the seedless watermelon on my watermelon recipes, to clarify:
- seedless watermelon have small white seeds (it’s not truly seedless) It’s like a cucumber.
- Seeded watermelon have the large black seeds.
- Poblano pepper, or jalapeño if you prefer.
- 1/2 red onion diced
- Limes, zest and juice
- Fresh cilantro
- Salt
- Mixing bowl
How to make Watermelon Salsa
I’m not sure if it gets any easier! Are you ready? Ok, dice up all the ingredients, mix them together. Devour.
Complicated, right!? 🙂
Tips and Tricks:
- You can sub 2-3 jalapeños or habanero peppers for the poblano if you like it extra spicy.
- Try fresh mint instead of the cilantro, or in addition to the cilantro. Basil would be great too!
- You can make this ahead of time, just put the salsa in a colander or strainer with a bowl underneath to catch all the juices. This keeps the salsa crisp and not soggy. Cover and refrigerate until you’re ready to serve it.
- This makes enough for 4 people, if you’re serving a large crowd, or just want more than that, this is easily doubled or tripled!
- Serve watermelon salsa with tortilla chips, on tacos, over grilled chicken, fish or tofu.

Ingredients
- 2 cups seedless watermelon diced
- 1 poblano pepper- diced
- 1/2 red onion diced
- 2 limes- zest and juice
- 1/3 cup cilantro chopped
- 1 tsp Salt
